Homemade Crackers

These crackers are like CRACK! They are super addicting, simple to make and taste JUST LIKE sour cream and onion chips!!! Baby L is going through a major teething phase and is super picky with his foods and snacks lately. He has been munching on baby cookies and crackers ALL DAY LONG for like 4 days. I was like hmmm why not bake something for him instead and this way I know exactly what is going into his tummy. Anyways, I came across this recipe on Pinterest - it is not my own. It includes cheese, almond and coconut flour and eggs. Full recipe below.

Ingredients:
2 tbsp. Chives (I used dry)
1 Egg
1/4 cup Almond flour
1/4 cup Coconut flour
1/8 tsp Salt
2 tbsp Butter
1 3/4 cups Mozzarella cheese
2 tbsp Sour cream
Directions:
1. Pre Heat oven to 400 F.
2. Melt the mozzarella in a frying pan over medium heat or microwave.
3. Remove from heat and mix in sour cream.
4. Using a mixing bowl, add the almond flour, coconut flour, egg and chives to the cheese mixture. Mix until well combined.
5. Wrap the dough in plastic wrap, then place in the fridge for 15 minutes. Between 2 pieces of parchment paper, roll the dough very thin using a rolling pin. Remove the top piece of parchment paper. Dough is super sticky and parchment paper is super slippery - fun times.
6. Using a cookie cutter, cut out some fun shapes. I preferred round over pointy as the dough is super sticky.
7. Place the shapes onto a parchment paper lined baking sheet. Brush the tops with the melted butter, then sprinkle with salt.
8. Bake for 8 – 10 minutes, watching them closely. (Place any dough scraps back in the fridge for another 10 – 15 minutes before rolling out again.)
Note: Make Sure to Use Parchment Paper NOT Wax Paper.
