Whipped Cookies

Simple, vegetarian (EGG FREE), cookies to be loved by ALL ages! I mixed this one up to accommodate everyone's sweet-tooth by topping a few with Nutella and some with homemade chia and berry jam.

Cookies:
1 cup butter, room temperature
1/2 cup confectioners' sugar
1/4 cup cornstarch
1.5 cups of all-purpose flour
Directions:
Pre-heat oven to 375 degrees;
Whip butter in mixer until fluffy;
Beat in sugar, cornstarch and flour on low for 60 seconds then high for a 3 to 4 minutes;
Roll cookies into balls using 1 tbsp. and insert either your thumb or using 1 tsp to intend center (if filling using Nutella or jam);
Cookies will spread so keep them 2 inches apart; and
Bake for 11-13 minutes until they become golden.
