Appley, Oaty & Nutty Breaky

Fall is in the air. This crisp weather makes me want to eat warm and comforting foods. The recipe below is a great meal, snack or dessert option. It's very easy to make and you can add whatever you want to make it your own. It's also a plus because Baby L LOVES it too. I sometimes add a little vanilla yogurt to changed it up a bit. It contains apples, oats (quick or rolled), nuts, and all of the yummy fall spices. Let me know if you enjoyed it as much as we did!


Ingredients:

  • 1 Honeycrisp apples chopped to bite size

  • 1/2 cup of oats (I used quick oats)

  • 1/4 cup nuts, roughly chopped. I used almonds and walnuts left over from my granola bar recipe

  • 1/4 cup dates, roughly chopped to bite size

  • 1 tbsp. coconut sugar

  • 1 tbsp. peanut butter

  • 1 tsp. cinnamon

  • 1 tsp. ground ginger

  • a dash of nutmeg

  • 2 tbs butter

Directions:

  1. Preheat oven to 375 degrees

  2. Mix all ingredients in a medium bowl by hand, crushing up the butter

  3. Toss it all into a oven-safe dish and cover with foil

  4. Bake for 25 minutes

  5. Top with yogurt as a snack or vanilla ice cream as a dessert
