Cranberry Jam - Perfect for the holidays!

So I found some leftover cranberries in my deep freezer and decided to make use of it this holiday season. I normally use it for holiday decoration around the house or boil it with cinnamon sticks and vanilla to make my home smell yummy. This year, I decided to make homemade jam. I used simple ingredients and added chia seeds. They make the sauce jelly-like and chias are amazing for your health.

After I made the jam, I realized I had raspberries in my fridge which Baby L does not like to eat. Maybe they are too seedy? But what a great combo would a cran-raspberry jam be? It would be naturally sweet too. I'll try it later.

I use this jam on toast, crackers, croissants and bake it with brie.


Ingredients:
2 cups of cranberry (frozen or fresh)
1 cup of sugar (or more)
2 tbsp chia seeds
1/2 cup orange juice
Directions:
Add all ingredients except chia seeds in a sauce pan on medium heat and boil.
Mash with a potato masher when cranberrys soften up.
Simmer for about 20 minutes.
Stir in chia seeds and simmer for a few minutes. The chia seeds will make it jelly-like without the use of gelatin.
Place in a tight jar once cooled down to room temperature (I found the one above at Dollarama) for up to 2 weeks. Enjoy!
